Croissants now available to order!

The wait is finally over... Croissants will be available starting this weekend! 🥐🎉

A few things to note:
  • These are larger "jumbo" croissants - the kind you would get in an artisan bakery.
  • They will only be sold in packs of 4 (not individually) and, for a limited period, it's 4 for the price of 3!
  • They will be available to collect from 10:30am on Saturday mornings.
  • Orders can currently only be placed 1 week in advance due to limitations with my online Shop[ify].

Obviously these will be hand-crafted right here in Hurst.

I'm using the legendary Bread Ahead recipe, which is also where I trained to make croissants. The process involves 48 hours of cold fermentation. The result? Impossibly buttery, flaky layers that shatter at first bite, with a tender, airy crumb that melts on your tongue.

But that slow process means I will need orders to be placed at least 2 days ahead to guarantee availability. Saturday morning the final proofing stage takes place, which is around 2 hours until they have doubled in size. They will go into the oven between 9:30 and 10am, meaning they will be ready to collect (still warm) from 10:30am!

I'm planning to experiment with overnight proofing soon, which means they can be baked as soon as I wake up resulting in them being available around breakfast time rather than brunch.
